Reheating Your Food: Why It Doesn’t Make It Safer

The Dilemma of Leftovers

There’s a distinct pleasure in knowing a meal awaits you in the fridge when hunger strikes. However, the challenge of consuming those leftovers before they spoil can feel like a race against time. Foodborne illness is a serious matter, which explains why a sauce that’s just a few days old might seem more off-putting than appetising. Yet, the hungrier you are, the more tempting it becomes to ignore the clock, particularly when some sources claim that reheating food can extend its shelf life by an additional three to four days.

This theory posits that warming food before harmful microorganisms have a chance to develop could delay their emergence. However, food safety experts suggest that this notion is largely misleading.

Understanding the Risks of Leftovers

Foodborne illnesses stem from bacteria, viruses, and parasites that contaminate our meals. What is often overlooked is when these pathogens form and their origins. Harmful bacterial strains can infiltrate our food through various means: cross-contamination during preparation, improper washing of ingredients, or even contact with germs from our own hands after touching unclean surfaces, such as light switches or taps. Bill Sullivan, a doctor and Showalter Professor of Microbiology and Immunology at the Indiana University School of Medicine, highlights the importance of maintaining a clean environment, regularly washing hands, avoiding recalled food items, and being vigilant about potential cross-contamination sources, like washing utensils that have come into contact with raw chicken.

If harmful pathogens are never introduced, it is significantly less likely that they will appear at all. While leftovers will inevitably spoil over time, the bacteria responsible for this decay may not necessarily be the ones that lead to illness.

The Danger Zone of Food Safety

The real threat arises during the period between cooking and cooling, when food enters the “danger zone” of temperatures, ranging from 4.4°C to 60°C. Dr. Sullivan explains, “As hot food cools, any bacteria that come into contact with it can multiply rapidly; some bacteria can double in number in just 20 minutes. The longer food remains in this danger zone, the higher the bacterial contamination and the greater the risk of heat-resistant toxins and spores.”

Reheating: A Temporary Solution

While reheating leftovers can eliminate certain types of bacteria and certainly makes a meal more appealing, it is not a foolproof method, argues Darin Detwiler, a doctor and food safety expert at Northeastern University. “Warming food helps, but it is not an absolute safeguard,” he states, noting that this is particularly true for leftovers that have been stored for more than three to four days, which is the recommended timeframe for safe consumption as advised by the Food and Drug Administration (FDA).

When food is reheated to 73.9°C, most active bacteria are killed. However, certain toxins and spores, such as those produced by Bacillus cereus in rice and Clostridium perfringens in meat-based stews, remain unaffected. “Reheating reduces the risk, but it does not eliminate it entirely,” Detwiler cautions.

Best Practices for Leftover Safety

Another concern is that repeated reheating increases the likelihood of leftovers returning to the risk temperature zone as they cool down. Detwiler advises, “Reheating only the portion you plan to consume and returning leftover food to the fridge promptly after the initial cooking is essential.” The notion that hot food will spoil its surroundings is a myth.

While it is not possible to indefinitely extend the life of your leftovers, Sullivan suggests that you can gain an extra day or two by adhering to proper safety protocols during and after cooking, as well as cooling them as quickly as possible. However, this will not constitute a complete reset. Even placing food directly in the fridge will only reduce the time spent in the “danger zone” rather than eliminate it entirely. Therefore, it is impossible to be 100% certain, particularly since the bacteria responsible for foodborne illnesses are not visible to the naked eye.

Making Informed Choices with Leftovers

So, what options are available to you? Start by discarding any food that raises doubts, especially if it has an unpleasant smell or appears slimy or discoloured, Detwiler advises. Following this, apply all recommended best practices during the initial cooking phase, ensure leftovers are reheated to 73.9°C, and use a thermometer to check that the temperature is consistent throughout the food before consumption. Lastly, remember that freezing is an excellent method for prolonging food shelf life, allowing you to enjoy your seemingly endless leftovers without the fear of falling ill.
